Henri de La Fabrègue, a doctor, started the business in 1850 with the aim of reviving the sweet wines of Rivesaltes. His son Pierre, a wine enthusiast, improved the quality of the vintages and spent a lot of time making them. The following generations have always been at the forefront of technical progress.
Experimentation with respect for the terroir has always been a guiding principle in Rombeau vineyard philosophy. For over 25 years, the winery has been using sustainable viticulture and since 2008, a quarter of the vineyards have been converted to organic farming.
